I’d like to rearrange the order of the categories and then reorder the topics within each. I know there’s a simple way, but I can’t find the option.
Any ideas?

Hi Ian,
Sure thing!
You should find the ordering interface by going to Add-ons-> Modules-> Discussion Forum: Forum Management
Once there, you should see dark header representing your forums, with rows under them for each forum’s categories.
Forums can be reordered by clicking the up/down arrows in the dark headers, and the categories within can be reordered by using the up/down arrows in the category rows.
